Most recipes today are designed for a family of 4. We have 10 at the table every single night; often have visitors too. Besides that our boys eat hefty amounts. Quantities here are always going to be large! You may need to 1/2 or 1/4 … otherwise cook for the freezer or for someone sick, or plan a party! Happy quiverful cooking! Roast Pumpkin
I hate peeling pumpkin, so lazy me; I just wash my pumpkin, stick it in the oven on a tray and roast away 'till tender. Cut up into big chunks once cooked, taking out pips but often times the skin can be left on and even eaten! Yum, we love our pumpkin! These ones are fresh as can be as a farmer brought them to church yesterday!
Baked Apples

Today we had a crowd and I resurrected an old recipe from my childhood. Baked apples...Core apples and put them in a glass oven proof dish. Stuff apples with died fruit, add a little brown sugar and some spices if desired. I didn't add sugar today and loved the baked apples as is but I think they were a bit tart for the kids. Bake in the oven for 1/2 until tender. Serve with ice cream, custard or creamed rice!
